Hard-boiled Bacon Egg and Cheese


Hello Friends,
           With Easter just 2 days away, what are you going to do with all your leftover hard boiled eggs?
If you're a foodie like me, you'll love the recipe I'm about to share with you ;-) It's simple, quick and a sure fire way to make those eggs disappear!

Hard-Boiled Bacon Egg and Cheese
What you'll need:
Note* this recipe is based on using 5 hard-boiled eggs 
( you can use whatever amount of cheese and bacon you see fit)
Hard boiled eggs
1/2 cup shredded cheddar cheese
1/4 cup bacon bits
Mrs Dash Seasoning to taste
 Table Blend


Instructions:
  • preheat your oven to 350
  • remove egg shells
  • slice your eggs in half (The long way, top to bottom)
  • place your eggs in an oven safe dish
  • sprinkle with seasoning
  • sprinkle cheese over top 
  • top off with bacon pieces
  • heat until cheese has melted

Simple Sunday: Mushroom, broccoli and cheddar mini quiche



Good Morning Friends,

I hope you've all had a fabulous weekend. Thanks for stopping in today. I'd like to share a quick recipe for Mini Quiche. So yummy, packed with veggies, full on flavor.  I'm sure you'll enjoy!!! A few minutes of prep and under 10 minutes in the oven... Ready, Set, GO!!!

Mini Mushroom, Broccoli and Cheddar Quiche


What you'll need:
4 eggs
1/2 cup skim milk
1/2 cup shredded cheddar cheese
1/2 cup diced mushrooms
1/2 cup diced broccoli
1/4 cup white onion
3 strips of cooked bacon *optional
(if you don't add bacon add a dash of salt to your egg mixture) 
tbsp olive oil
skillet
cupcake/muffin tin
cooking spray
Note* Recipe yields 9 mini quiche

Instructions:

  •  Pre-heat oven to 350
  • In a large pan, saute broccoli, onions and mushrooms in olive oil.
  • while veggies are cooking, crack 4 eggs into large mixing bowl. 
  • Add milk and mix with fork. Don't scramble eggs, just mix them slowly with fork.
  • Turn off heat on veggies, let them sit for 2 minutes
  • add cheddar cheese to eggs, then quickly blend in veggies and bacon
  • pour mixture by the 1/4 cup full into cupcake tin that has been sprayed with cooking spray
  • bake for 7-8 minutes until cheese is nice and gooey/bubbly.


Remove from oven, gently loosen edges with butter knife, and enjoy!!! 

 * Note: I served my mini quiche with baked biscuits and fresh fruit.

Scrambled Eggs and Biscuit Bake

Breakfast is said to be the most important meal of the day. Why not savor it... This morning I baked scrambled eggs, veggies, cheese, and biscuit mix. The result was amazing. Keep reading if you'd like the recipe and simple instructions!! 

What you'll need:
1 cup Jiffy Baking Mix
1/3 cup 1% milk
2 tbsp shredded Parmesan 
1/4 cup diced onion
1/4 diced peppers(red or green)
4 eggs
onion salt -to taste
black pepper- to taste
cooking spray

Instructions:
  • In a mixing bowl, blend 1 cup of Jiffy mix with 1/3 cup milk. Stir until a lumpy dough is formed. 
  • In a second  mixing bowl, crack 4 eggs and scramble lightly with fork. Add onion salt and pepper to taste.
  •  Heat a small pan with cooking spray and saute  diced onions and peppers. 
  •  Add peppers ,onions, and 1 tbsp of Parmesan to scrambled eggs.  blend. 

  • Coat the bottom of a glass baking dish with cooking spray. Pour in egg mixture. Take spoonfuls of biscuit mix and drop into eggs. Top with remaining  Parmesan cheese. 
  •  Bake at 450 for 20 minutes.  Serve with one cup of fruit ENJOY!!

Emptying out the Fridge : Make Ahead Breakfast Sandwiches

Hello All! Happy Monday.

Today, I'd like to share a quick, convenient, and tasty way to have your breakfast prepped ahead of time during the week! This post is sure to save you time and money!! So read on!!!!!


What you'll need:

(To make 6 sandwiches)
6 English Muffins
6 slices of your favorite Cheese
6 Eggs
6 pieces of meat ie;sausage link, bacon, or ham (or got meatless)
Instructions:
  • Preheat your oven to 350 degrees
  • spray 6 muffin tins with non-stick spray
  • crack an egg into each of your six tins. (if you prefer scrambled eggs, simply scramble the eggs in a bowl and pour into muffin tin.) 
  • Open your English muffins and place face up onto the extra space on your muffin tin, or place on a cookie sheet
  • place English muffin and eggs into oven and check after 8 minutes. (If the middle of the egg still jiggles, allow to remain in oven. Check every minute or so as the eggs will cook quickly.) 
  • Heat your meat of choice. I used turkey sausage so I simply wrapped in a paper towel and cooked in the microwave for 45 seconds
  • Remove items from oven and assemble your sandwiches.
  •  Once assembled, wrap in wax paper. Wrapping in wax paper will allow for a fuss free re-heat.

Tip: I wrap my sandwiches in wax paper, then place in a sandwich bag. I allow my sandwiches to remain in the fridge for a few hours before I freeze them for the week. For the best re-heat, remove from sandwich bag, place sandwich wrapped in wax paper in microwave for 45 seconds. Check to be sure your sandwich has reheated thoroughly . Remove wrapping and enjoy!!

Sour cream, banana pancakes... YUM!


Hello Friends,
Looking to make some yummy comfort food for breakfast? Well, look no further. Sour Cream, Banana Pancakes are where it's at! Fluffy, thick, deliciously sweet pancakes. ENJOY!!!!


What you'll  need:
2 cups Jiffy baking mix ( I love this stuff.)
3/4 cup milk
1 egg
1/2 cup sour cream
2 tbsp sugar
1 or  2 large ripe bananas
1 tsp cinnamon
1 and 1/2 teaspoons vanilla extract
your favorite syrup

Instructions:
  • Combine baking mix, sugar and cinnamon in a large bowl
  • and milk, stir
  • add sour cream, stir more
  • add  egg, mix well
  • add vanilla extract,stir
  • dice banana into small pieces, or slice thin
  • finally, fold half of your bananas into  pancake mix with large spoon ( save other half for garnish)
Cook:
  • heat your skillet
  • spray with non stick spray (or use butter if you prefer.)
  • add 1/4 cup of batter to your skillet (depending on size of skillet you can make 3 or more  pancakes at a time.)
  • cook until golden brown (about two minutes) then flip.
Sour cream, banana pancakes. Served with lean ham and kiwi slices.
When you have finished cooking your delicious pancakes, garnish with slices of banana. Top with your favorite syrup and Nom,Nom, Nom your way to a nice full belly!!

Simple Sunday: Happy New Year!!!

Hello Friends,

I hope you've all had a fabulous holiday season. Welcome to 2012. With the new year, comes new opportunities, new ideas, and new challenges. (Both good and bad) May God send his blessing your way as you continue to grow this year.

 Speaking of growth, every year  people make new years resolutions... I giggled to myself as I went for a walk around Jamaica Pond this morning. It was more crowded than usual... Partly because it is 55 degrees in January... but, I couldn't help but wonder, how many people at the pond were only there because they made a resolution to lose those last pesky few pounds????

I think people put a lot of pressure on themselves to accomplish goals that aren't realistic. Or, they make the mistake of comparing themselves to unrealistic people, ie; celebrities. I mean, If I could have a personal chef who makes cardboard taste like brownies, I'd be thin too!!

Let's look at a simple way to get healthy, together. One word... BREAKFAST. People, would you try and start your car if it had no gas? NO! So why do you try and start your day without breakfast?

Here is a super simple, delicious way to start the day.

 Yogurt, granola, and fruit breakfast
 
What you'll need:
1 tsp Honey
 half a Banana
half an apple, diced into small pieces 
1/2 cup granola cereal
1 cup plain or vanilla yogurt

Instructions:
Simply layer your mug ( I use a clear mug because it's cute, the better your food looks, the better it tastes! Just saying) with the items listed above, drizzle the honey on top, and enjoy!!

Each spoonful will be filled with healthy goodness.





Starting your day with a healthy breakfast, can help you accomplish whatever resolution you've made for yourself this year. (Unless your resolution is to starve.) Your brain and body need fuel for the day. So get up, have breakfast and power toward the goals you have set for yourself!!!
