Emptying out the Fridge: Cilantro Lime Rice

Good Afternoon Friends,

Is your rice stuck in a rut? :-) Here is a quick fun recipe that will surely add a new kick to the popular side dish!! 

CILANTRO LIME RICE


What you'll need:
1 cup of white rice
2 cups of water
Juice of half a lime
3 tbsp of fresh chopped cilantro
1/2 tbsp olive oil
1 tsp salt

 Instructions:
  • Bring two cups of water to a boil
  • Rinse and drain rice
  • Once water is boiling, add salt, olive oil, and rice
  • return to boil
  • cover with lid and reduce to a simmer for 15 minutes
  • Once your rice has cooked add the juice from the lime and your chopped cilantro, mix well. 
  • Cover and let stand for 10 minutes
  • ENJOY!!!!!

I served my rice as a side with delicious buttermilk fried pork chops!!!YUMMMMMY!!

Emptying out the Fridge: Doctor up your frozen pasta ;-)

Hello Friends,

Today, I'd like to share a quick idea that will  help you turn bland to bold when it comes to frozen/canned goods!!.

To add some pizazz to your frozen pasta ie; tortellini or ravioli:
  • Saute your favorite vegetables in olive oil and garlic. The herbaceous taste of the olive oil, mixed with garlic is sure to pack a flavorful punch. Adding olive oil to your pasta will also ensure the texture doesn't turn sticky.
  • add fresh pepper  to your canned alfredo sauces. It really helps bring out more flavor.
I was able to turn this: 
  Frozen peppers
Frozen cheese tortellini
canned alfredo sauce
fresh cherry tomatoes
(Plus minced garlic and olive oil for sauteing)

Into this:

Simply combine your pasta, veggies, and sauce. 

A flavorful and filling dinner!!! 

The lesson here is, don't be afraid to spice up what you already have in your kitchen. Delicious food doesn't always have to equal a trip to the market ;-)

Emptying out the Fridge : Make Ahead Breakfast Sandwiches

Hello All! Happy Monday.

Today, I'd like to share a quick, convenient, and tasty way to have your breakfast prepped ahead of time during the week! This post is sure to save you time and money!! So read on!!!!!


What you'll need:

(To make 6 sandwiches)
6 English Muffins
6 slices of your favorite Cheese
6 Eggs
6 pieces of meat ie;sausage link, bacon, or ham (or got meatless)
Instructions:
  • Preheat your oven to 350 degrees
  • spray 6 muffin tins with non-stick spray
  • crack an egg into each of your six tins. (if you prefer scrambled eggs, simply scramble the eggs in a bowl and pour into muffin tin.) 
  • Open your English muffins and place face up onto the extra space on your muffin tin, or place on a cookie sheet
  • place English muffin and eggs into oven and check after 8 minutes. (If the middle of the egg still jiggles, allow to remain in oven. Check every minute or so as the eggs will cook quickly.) 
  • Heat your meat of choice. I used turkey sausage so I simply wrapped in a paper towel and cooked in the microwave for 45 seconds
  • Remove items from oven and assemble your sandwiches.
  •  Once assembled, wrap in wax paper. Wrapping in wax paper will allow for a fuss free re-heat.

Tip: I wrap my sandwiches in wax paper, then place in a sandwich bag. I allow my sandwiches to remain in the fridge for a few hours before I freeze them for the week. For the best re-heat, remove from sandwich bag, place sandwich wrapped in wax paper in microwave for 45 seconds. Check to be sure your sandwich has reheated thoroughly . Remove wrapping and enjoy!!

Emptying out the fridge!!!

Hello Friends... Happy Saturday!


Over the next two weeks, I'm going to challenge myself. In an attempt to no longer waste food, I want to use most of the items in my fridge, freezer, and pantry before purchasing new stuff. I have tons of frozen meat and fish, frozen veggies and some frozen pie crusts. (This should be pretty easy. Right?)

So, when I head to the grocery store, no meat,cereal, or cake mix will enter my cart.  I will  however purchase perishables such as milk, cheese and fresh fruit. All other items used for cooking WILL come from my fridge or pantry.

I'm happy to attempt this mission ;-) I'm also excited to share new recipes with you all!
