Happy Monday all. Hope you've had a fabulous weekend!
In honor of Columbus Day, all government offices are closed here in Boston. Since I am a teacher, I have my day to blog, craft, and spend time with loved ones. Speaking of loved ones, last night I had dinner at my parents house. We cooked together and enjoyed each others company... (well, at least I'd like to think we did. Puhahahahahh.)
Need a a yummy dinner idea for tonight? Or, a delicious side dish/ appetizer? Look no further...Here's a peek at what we cooked last night.

While Lars grilled up the seafood, Mom and I headed to the kitchen to put together our twice baked potatoes. I like to pretend I helped a bit more than I did... I mean does licking the bowl, taking photos, and eating count as helping? ;-)

Anyway, If you'd like the recipe for what is sure to become a family favorite, read on!
TWICE BAKED POTATOES
What you'll need:
Potatoes (We used 5 small and 2 medium)
3/4 cup of shredded cheddar cheese
1/2 cup sour cream
1/4 cup of Tzatziki yogurt dip with dill
(dip is optional, packs a delicious punch.)
1/4cup Bacon bits (Not the cheapo type. Real bacon pieces.)
Instructions:
Preheat your oven to 400
Take your potatoes, toss in microwave for 5 minutes on high. This will speed up the cooking process.
(If you use larger potatoes, place in microwave for 8 minutes.)
Remove potatoes from microwave arrange on cookie sheet and place in oven for 10 minutes to crisp the skin.
Remove potatoes from oven, slice in half, and scoop insides into a bowl.
Once you have removed insides, place empty potato skin back into oven (for crisping) while you prep your filling.
Filling:
Take your bowl of potatoes, add sour cream and tzatziki and mash well.
Remove your potato skins from oven (after about 5 minutes) and begin to fill with a large spoon.
Once filled, sprinkle with bacon, cheddar, and place in oven until your cheese begins to turn golden brown and bubble... (The smell coming from your oven is sure to make you drool!)
Once finished, your twice baked potatoes should look something like this. |
